Baked Manicotti

This dish is very addictive and you may just become italian. The recipe is from the Garlic Lover’s Cookbook and it has such a great taste that you just may make the sauce by it self and be delighted.

Sauce

 Unit  Ingredient
1 lb. lean ground beef
1 lb. hot Italian sausage
.5 cup Italian bread crumbs
.5 cup virgin olive oil
3 cups chopped onion
8-10 cloves fresh garlic, chopped
2.5 cups water
56 oz. diced Italian tomatoes, undrained
9 oz. tomato paste
4 tbl. parsley, chopped
2 tsp. dried basil leaves
1 tsp. dried oregano leaves
1.5 tbl. sugar
1.5 tbl. salt
  • Place the beef and sausage in skillet and brown thoroughly.
  • Drain off grease.
  • Transfer to large bowl
  • add bread crumbs and blend
  • set aside for awhile
  • In large pot add oil
  • Saute onions and garlic – 3-5 minutes
  • Mix in remaining sauce ingredients
  • Bring to boil
  • Reduce heat
  • Add meat mixture
  • Simmer, covered – 1.5 hours
  • Cook manicotti shells
  • Drain
  • Set aside

Filling

unit ingredient
2 lb. ricotta cheese
8 oz. Mozzarella cheese, shredded
.3 cup grated Parmesan cheese
1 tbl. parsley, chopped
2 eggs
1 tsp. salt
.5 tsp. Italian seasoning
.25 tsp. pepper
  •  Combine all the ingredients in big bowl
  • mix well
  • stuff manicotti shells
  • In large baking dish, put layer of sauce in bottom.
  • Put shells in dish
  • cover with remaining sauce
  • sprinkle with parmesan cheese
  • Bake, covered @ 350 – 45 minutes
  • Uncover, bake additional 10-15 minutes
